Garlic chicken quinoa salad

Refreshing chicken quinoa salad for a light lunch. This recipe is my favorite either at home or bringing to the office.


It is packed with good nutritious foods, well-balanced and so tasty and refreshing. Chicken breast is a great source of lean protein (meaning protein without lots of accompanying fat) helping you to maintain muscle mass and improving joint health while quinoa is packed with a nutritious combination of vitamins, minerals, fiber, protein, and fatty acids.


Quinoa is naturally low in sodium and rich in fiber and protein, making it a filling, nutritious replacement for refined grains and that's why it's called super food and listed as good carbs.


The recipe is easy, only takes from 15 - 20 mins, best to eat cold. It's perfect for a light lunch taking into the office or eating at home.



Ingredients

Salad

1 tablespoon coconut oil

1 chicken breast

1/3 cup of quinoa

Handful of rocket leaves

1/2 cucumber

5 cherries tomatoes

salt n pepper to taste

1/4 teaspoon Garlic powder

1 teaspoon of seeds.




Sauce

1 Tablespoon lime juice

1 tablespoon orange juice

1/2 teaspoon Dijon mustard

1 tablespoon of honey

1 teaspoon chopped mint leaves .


Methods.

Sprinkle some salt, pepper and garlic powder on chicken breast. Heat up coconut oil on a frying pan and fry in high heat until golden bold sides. Cook quinoa in 1 cup of water on low heat for 20’ and leave it to cool down.


Chopped cucumber, tomatoes mixed with rocket leaves and quinoa.


Mixed all the sauce ingredients together.


Cut the chicken into smaller pieces, place on top of salad mixture and top up with some seeds.


Pour the sauce on top, mix well and enjoy.
