Baked salmon quinoa salad with simple balsamic vinaigrette

Healthy, delicious, refreshing salad for a hot summer day! Packed with healthy ingredients which are high in protein, fiber, vitamin D, E, A and good fats. This salad is not only tasty but also will fill you up and won't let you go hungry like the regular salads.

Ingredients are made for 4 portions. Each portion is about 600 calories. Take only 15 mins to prepare the dish but total cooking time is 50 mins.

Simple Balsamic Vinaigrette

  • 2 tablespoons balsamic vinegar

  • 3 tablespoons olive oil

  • 1 teaspoon dijon mustard

  • 1 clove garlic minced

Salmon Quinoa Salad

  • 2 cups cooked quinoa cooled or chilled

  • 4 cups chopped romaine lettuces

  • 1/2 cup cooked edamame beans

  • 1/2 cup chopped tomato

  • 400 gram wild salmon skinned

  • Salt + pepper to taste

  • 1 tablespoons olive oil

  • 1 clove garlic minced

Direction:

  1. In a large bowl, add cooked and cooled quinoa, lettuces, edamame beans, tomato, red pepper, and balsamic vinaigrette. Season with salt and pepper. Gently toss and set aside.

  2. Generously season salmon filets with salt and pepper. In a baking tray,. Place salmon on a baking sheet, add garlic into olive oil, brush on top of the salmon, preheat the oven at 175 degrees for 5’, and bake the salmon for 30 mins.

  3. Once the salmon fillets are cooked, and have cooled, break them apart using a fork and toss into the quinoa salad.

Mixed well before eating.
